You get a great symphony of textures and tastes – sweet and gooey banana brownies with crunchy and salty almonds in the middle and caramelized marshmallows on top. They are so fun for the whole family to create and enjoy together.
What is your go-to ice cream flavor?
Rocky Road is one of my favorites! Who doesn’t like a rich chocolate base with all the toppings in every bite, salty almonds, sweet marshmallows, and more. That’s where Rocky Road’s magic truly comes alive.
The contrast of textures and flavors – We have a soft and gooey brownie base with crunchy almonds, and a rich and deep chocolate batter mixed with sweet pockets of melted marshmallows.
It is that exciting but easy dessert everyone wants to take part of during the baking process. And it is also that show-stopper treat we will all come back for seconds.
Ingredients for Rocky Road Brownies
Bananas are the base that makes these brownies soft and gooey. They are also the main sweetener for this recipe.
Room Temperature Eggs are used here to give the brownies a bit more of a lift since there is no flour or gluten in the batter.
Peanut Butter is to replace conventional butter. And of course we need the peanuts for that signature rocky road flavor.
Cacao Powder or cocoa powder, you choose. Cacao powder will provide you with a richer chocolate taste but it is a little more bitter compared to cocoa powder.
Marshmallows are the perfect add-ins for these brownies. They get melted into sweet pockets in the middle of the brownies and also become caramelized and crispy on top.
Roasted Almonds add that crunch which provides the perfect texture contrast to the gooey and soft banana brownies.
Baking Soda is optional. I like using 1/4 to 1/2 teaspoon of it because it gives the brownies an extra lift since there is no gluten or flour in this recipe.

So Many Customizations To Make it More Fun
This might be the most versatile easy brownie recipe to customize and throw in your own punch.
To begin with, you can use almond butter or cashew butter instead of peanut butter.
You can also use honey-roasted peanuts, salted cashews or candied walnuts. Roughly chop them up and mix in the batter.
Another classic add-in is chocolate chips! I always fold in chocolate chips in my banana brownies, because they create pockets of melted chocolate delights in every bite. Since we already have mini marshmallows mixed in the rocky road brownie batter, I left out the chocolate chips. But you should certainly add them in if you want even more of a chocolate adventure.
What else?
Dried fruits are great to add in. We are getting a little bit of a trail mix flavor here. Dried cherries, apricots, plums are all fun ways to take them up a notch.

Rocky Road Brownies {Made with Bananas}

Ingredients
- 1 1/2 cup mashed ripe bananas **
- 1/2 cup smooth almond butter
- 2 eggs room temperature
- 1/4 cup cacao powder
- 1/4 tbsp coconut sugar ** Optional
- 1/4 tsp baking soda
- 1 cup mini Marshmallow divided
- 1/2 cup Roasted Almonds
- A pinch of sea salt Optional
- 1/2 cup chocolate chips optional
Instructions
- Preheat oven to 350F
- In a large mixing bowl, mash ripe bananas with a fork or hand mixer
- Add almond butter and eggs to the mashed bananas
- Mix the wet ingredients well until smooth and well combined
- Add cacao powder, coconut sugar, baking soda, and a pinch of salt to the wet ingredients. Mix until combined.
- Gently fold 2/3 marshallows and almonds into the batter
- Add the brownie batter to a parchment paper-lined 8×8 baking pan, then add the rest of the marshmallow and almonds on top.
- Bake for 22 – 25 minutes or until the preferred gooeyness in the middle (I prefer mine a little under-done)
- Cut the brownie into squares once it cools down for 10 minutes
